On the Rise…or not

     

        For a couple years now I have been experimenting, trying to find a good recipe to make sandwich bread for my family. With prices on store bought bread and all the unknown ingredients in reasonably priced bread I wanted to learn to make it myself, at home. Now, I attended baking school, though I didn’t finish, I did bake a lot of breads and thought it would be easier than it has been.

        When I first started to try to make my own white bread I didn’t have a stand mixer and I wasn’t a fan of trying to work yeast. I tried a couple yeast less recipes and they were alright but they obviously didn’t rise and get fluffy like a yeast bread would. I decided to give yeast bread a try but the recipe I chose was a bit more involved and time consuming than I had time for with a young infant.

        After trying a few different recipes and instructions I decided to take a break from learning to make bread. Instead I found frozen bread dough in the store. All I had to do was spray the loaf pan, put the dough loaf in the pan, let it rise a few hours and then bake. I got to have fresh baked bread and that amazing aroma, without have to put in so much work. It sufficed at the time and if I was to get so busy again I would go back to that.

       It wasn’t till last week that I finally decided to try my hand at home baked bread from scratch again. My boys are older, my husband had the day off and I had invested in a stand mixer. I found a new recipe to try, it didn’t look to difficult and it didn’t look as time consuming. Once I made the dough, had it rise and baked it , I had two loaves of bread then smelled and tasted amazing. They had a nice buttery crust. One rose beautifully, the other didn’t rise as high. While I still have some improvement to make, I’m proud of how far my bread journey has come. I will continue to try and bake my bread with love. I know when I put love, care and passion into my cooking I can tell a different in the taste.
